  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 stick unsalted butter, cubed
  • 1 cup chicken broth
  • 4 cloves garlic, minced
  • 2 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp cayenne pepper
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup heavy cream
  • 2 tbsp cornstarch
  • 2 tbsp cold water
  • Fresh parsley, chopped for garnish

Instructions

  • Place the raw chicken in the bottom of the slow cooker.
  • In a small bowl, whisk together the paprika, garlic powder, onion powder, thyme, oregano, cayenne, salt, and black pepper.
  • Sprinkle the spice rub evenly over the chicken.
  • Scatter the cubed butter over the seasoned chicken.
  • Add the minced garlic and pour the chicken broth into the cooker.
  • Cover and cook on low for 6 hours or high for 3 hours until the chicken is tender.
  • Whisk the cornstarch and water in a small bowl to create a slurry.
  • Stir the heavy cream and the cornstarch slurry into the slow cooker.
  • Cover and cook for an additional 15-20 minutes until the sauce is thickened.
  • Garnish with fresh parsley before serving.

Notes

You can shred the chicken with two forks before adding the cream if a pulled-chicken texture is preferred. For extra heat, increase the cayenne pepper by another 1/2 teaspoon. Store leftovers in an airtight container in the refrigerator for up to 3 days.
