Ingredients

  • 1.5 lbs chicken breasts, partially frozen and thinly sliced
  • 2 large yellow onions, thinly sliced
  • 2 medium green bell peppers, julienned
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and freshly cracked black pepper to taste
  • 6 slices provolone cheese
  • 4 fresh hoagie rolls
  • 2 tablespoons unsalted butter, softened

Instructions

  • Place partially frozen chicken on a cutting board and slice into very thin strips.
  • Slice onions and bell peppers into uniform strips.
  • Heat 2 tablespoons of olive oil in a large cast-iron skillet over medium-high heat.
  • Add the chicken in a single layer and season with garlic powder, smoked paprika, salt, and pepper.
  • Cook until chicken is golden-brown and juices have evaporated, then remove from pan.
  • Add remaining tablespoon of oil to the same skillet and sauté onions and peppers until soft and slightly charred.
  • Return chicken to the skillet, combine with vegetables, and divide into four mounds.
  • Top each mound with a slice of provolone cheese and turn off the heat; let melt.
  • Butter the hoagie rolls and toast lightly in a separate pan until golden.
  • Carefully transfer the chicken and cheese mixture onto the toasted rolls and serve.

Notes

Using partially frozen chicken makes it significantly easier to achieve the required paper-thin slices. Ensure the pan is hot before adding the chicken to get a proper sear rather than steaming the meat. You can substitute the provolone with mozzarella or white American cheese for a different melt texture.
