Ingredients

  • 1.5 lbs boneless skinless chicken breasts, cubed
  • 1.5 cups uncooked long-grain white rice
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 2.5 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • 1/2 cup grated parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons melted butter
  • 1/4 cup shredded cheddar cheese

Instructions

  • Preheat oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  • In a large bowl, whisk together the rice, chicken broth, mushroom soup, chicken soup, garlic powder, onion powder, and dried parsley.
  • Add the cubed chicken to the mixture and stir until well coated.
  • Pour the mixture into the prepared baking dish.
  • Cover with aluminum foil and bake for 35 minutes.
  • Remove the foil, sprinkle with panko, parmesan, and cheddar, then bake uncovered for another 10-15 minutes until chicken is cooked through and rice is tender.

Notes

Ensure the chicken pieces are cut into uniform bite-sized pieces for even cooking. If the rice seems dry after baking, let it rest for 5 minutes covered to absorb the remaining moisture.
